Easy Chocolate Chip Cookies


mmmm...these are so good! chocolate chip cookies are my favorite. super easy and you can eat as many of them you want. But please share...When I give you this easy recipe, you can keep it for yourself or share your secret....mmmm????

Mix together in a bowl pour as many morsels you like




Dip and form a chocolate cookie ball as big as you want them place them on a cookie sheet


Place your cookie in a per heated 350 oven until chocolate start to melt and cookie start to spread and brown lightly


Enjoy the sweet taste of the South with these heavenly homemade pralines with roasted pecan and added roasted coconut makes these babies great.

2 ½ cups roasted grated coconut

3 tablespoon butter

1 teaspoon coconut extract

3 cups light brown sugar, packed

1   cup half and half

3   cups roasted pecan halves


Combine the sugar, milk in a heavy pot and bring to a boil over medium heat. Boil, stirring, until the mixture comes to the soft-ball stage (about 239 degrees on a candy thermometer). 
add pecan and coconut and coconut extract
Remove from the heat, add the butter and beat until the mixture begins to sugar.
Drop in small mounds on wax paper. Cool, then gently lift with a thin knife. Store in an airtight container.

Enchilada Chicken Dip


Enchilada Chicken Dip will all the taste of mexico. This dip will be a big hit at your next party it good and hot and you can make it spicy and serve with corn chips, "Try It" It's easy as A B C and 1 2 3 to make and have it ready for your family and friends fast and speedy.



4 tablespoon oil

1 small onion finely diced

2 clove garlic, minced

1/2 cup finely diced bell peppers mini multi-colored ones

1/2 teaspoon salt adjust to your family taste

1/4 teaspoon black pepper

1/2 teaspoon cumin

1/8 teaspoon cayenne to your family taste

1/2 cup roasted, peeled green chiles

1/2 teaspoon Ground Coriander

1 bag corn tortillas for dipping

1 lb cooked chicken, chopped small, about 2 1/2 cups

1 1/2 cups green chile sauce store bought

1/2 cup sour cream

1 1/2 cups shredded Mexican cheese blend save half Of the cheese.

In a large skillet, heat the oil over medium high heat. Add the onions, garlic, peppers, salt, pepper, cumin and cayenne and coriander. Saute until almost tender.

Add the chicken, the green chile sauce and the sour cream. Reduce the heat to medium and stir until the sour cream has melted into the sauce. Remove from the heat, Stir in 1 cup of cheese and transfer to a baking dish. Top with the rest of the cheese and Place in oven to 350 degrees bake for 20-25 minutes, until the cheese has melted and the sides of the pan are bubbling. Let set for at least 15 minutes before serving. 

Avocados, Asparagus And Bacon Guacamole


This is a twist in this Guacamole recipe. I know you like a change like me. I like to make recipes a Wow Moments! People can enjoy and have fun with a good taste. Bacon really do bring out the great favor in this recipe something everyone loves.




4 strips bacon cooked crispy

1/2 cups asparagus chopped and lightly steamed

2 1/4 teaspoons freshly-squeezed lemon juice

3 large, ripe avocados

Juice of 1-2 limes

½ medium white onion, diced

1 large tomato, seeded and diced

1-2 large jalapeno seeded and diced

1/3 cup fresh cilantro, finely chopped

salt, to taste

1/2 teaspoon chili powder

1/4 teaspoon ground cumin

1/4 teaspoon black pepper

1 clove garlic, pressed or minced

Dash cayenne pepper

1/3 cup light sour cream

1/4 cup mayo

Preparation:

Slice avocados in half lengthwise, remove the seed, and scoop flesh into a medium bowl. Add juice of one lime and mash the avocado with the back of a fork Add onion,tomato,jalapeno pepper,sour cream,mayo,all spicy and cilantro. Mix well and add more lime juice and salt, to taste.


In a blender or food processor, combine ,asparagus,lemon juice.

Transfer the asparagus with the avocado mixture into a bowl.Blend in the cold chop cook bacon pieces. Cover tightly and refrigerate several hours or overnight before serving for flavors to blend.

My Sister Marilyn's Monkey Bread

My sister Marilyn always coming up with something fun to eat. - we always seating around the kitchen table doing nothing but talking and laughing and up pop something good to eat and fun - her old fashion monkey bread good and hot and sticky. with a good cup of her coffee or a good tall glass of ice tea we have a good ole time.




Original recipe makes 1 10 inch tube pan

    3 (12 ounce) packages refrigerated biscuit dough get the cheap ones

    1 cup white sugar

    2 teaspoons ground cinnamon

    1/2 cup sweet butter

    1 cup packed  dark brown sugar

    1/2 cup chopped walnuts or pecans

    1/2 cup raisins or a lot if you like raisins

Directions

Preheat oven to 350  Grease one 9 or 10 inch tube
Mix white sugar and cinnamon in a brown paper bag. Cut biscuits into quarters. Shake biscuit pieces in the sugar cinnamon mix. Arrange pieces in the bottom of the prepared pan. Continue until all biscuits are coated and placed in pan. If using nuts and raisins, arrange them in and among the biscuit pieces as you go along.
In a small saucepan, melt the butter with the brown sugar over medium heat. cook for 1 minute. Pour over the biscuits.
Bake at 350 for 35 minutes. then turn out onto a plate. adding icing topping Do not cut! The bread just pulls apart.

Icing topping
1 cup powder sugar
2 tablespoon butter
1 tablespoon milk
1 table of vanilla

blend together until thin to pour over hot monkey adding more chopping nuts if you like... for those little monkeys.

 

Grandma's Old Fashion Tea Cakes



Original recipe makes 2 dozen Change Servings

    1 cup butter

    1 3/4 cups white sugar

    2 eggs

    3 cups all-purpose flour

    1/2 teaspoon baking soda

    1/2 teaspoon salt

    1/4 teaspoon ground nutmeg

    1 teaspoon vanilla extract

Directions

  1. In a medium bowl, cream together the butter and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking soda, salt and nutmeg; stir into the creamed mixture. Knead dough for a few turnns on a floured board until smooth. Cover and refrigerate until firm.
  2. Preheat the oven to 325 degrees F (165 degrees C). On a lightly floured surface, roll the dough out to 1/4 inch in thickness. Cut into desired shapes with cookie cutters. Place cookies 1 1/2 inches apart onto cookie sheets.
  3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Meat Balls Come And Get Them

My mother always cook a big pot of meat balls.We ate as many as we wanted not with pasta; we ate them with creamy mashed potatoes.

It's seem like that homemade red thick tomato gravy just give those creamy mashed potatoes the best taste ever.

When the Meat Balls was gone from the pot, we did not care too much because we had the wonderful meat ball gravy to do some serious slopping with bread.

Here we Go!

Adding water and two teaspoon salt to a big pot filling almost full to the top and let boil.

In a bowl at 2 pound ground meat
3 Beaten  Eggs
1 cup Milk
1/2 cup water
Chop real fine 1/2 cup each green onion and red and green bell peppers
Spice 1 tablespoon each onion powder, garlic powder,salt and black pepper.

Mixing all together

Rolling into a ball

Place them on a sheet pan
Than drop them one by one in the boiling water. Cook 10 mins.
Draining meat balls and place in another pot
Pour four Jars pasta Sauce and and cover pot and let simmer on med heat for 30 mins
You can also make a Meat Ball Sandwich

 

 

Chocolate Caramel Pecan Cookies

As I was growing up and right now...I am a cookie kinda of a girl. I love all kinds of cookies. I like to buy them. Until I just start making them homemade. At first I did not know you can make cookies real real good like the ones you buy. I thought you had to get them out of the store or order them to get a good cookie.

When I hear someone saying I am going to bake some cookies.I will say to my self that is a waste of time you can go to the store and buy them already made .

Well silly me...One raining day, I had no cookies in the house, the cookie monster show up. I thought trying baking some cookies for the first time and I'm sure it will be my last time. But guess what??? I am a fresh cookie baker today... those cookies was the best in the west!

I make up a cookie recipe and it did turn out great! I used cake mix and had some Rolo chocolate candies over from Halloween.

Here The Recipe:

One Box Butter Cake Mix

26 Rolo Candies

1 1/2 Cup Chopped Pecan

One Egg


1/4 cup milk

3 Tablespoon Melted Butter
Adding into a bowl cake mix,chopped pecan, milk,egg and butter mixing together forming dough.
forming in what side cookie... shape in balls adding a rolo in side of each ball.

Before baking roll on some chopped Pecans just a little more extra ....Bake 350 for 10 mins

 

 

Country Style Apple Butter


When I was a child my Daddy bought apple butter to the table every morning. That apple butter warm our hearts with love and sharing a good thing. At our table bacon or sausage or sometime both was serve with eggs fix with a lot of black pepper and with those hot homemade biscuits waiting for that good old apple butter to be put on them.

Those mornings will always be deep into my soul when my family was all together eating breakfast with my Dad and the apple butter ...Love you Daddy and you are truly miss.

Home Made Apple Butter:

Start with 14 peeled-sliced apples (core for worms) . Place these in your crock pot pouring 2 cups of apple juice cover and cook on High for 4 hours.

Add 6 cups of sugar, 6 tsp. of cinnamon, 3 tsp. of cloves and 3 tsp. of allspice. Stir and cover.  Cook on High for 6 hours.  Stirring every 2 hours.  For the last 3 hours remove the lid from your crock pot as this allows the butter to really cook down. add 2 tablespoon vanilla extract blend in well.

Ladle the apple butter into jars and process in a boiling water bath for 10 minutes.
Or you can freeze the apple butter In freeze bags. (Keep In refrigerator when open).


Blooming Onion

Onion Lovers...I got this recipe for you and yours to share with love. It's the blooming Onion. Lot of taste and crispy onions dip in a creamy sauce.

How To Make The Dip For the Onion:

Dipping Sauce

2 tablespoons mayonnaise

2 tablespoons sour cream

1 1/2 teaspoons ketchup

1/2 teaspoon Worcestershire sauce

1 tablespoon drained horseradish

1/4 teaspoon paprika

Pinch of cayenne pepper

Salt and black pepper to taste

Combine all of the dip ingredients in a bowl, cover and refrigerate.


The Batter

1 large sweet onion, such as Vidalia (about 1 pound)

2 1/2 cups all-purpose flour

1 teaspoon cayenne pepper

2 tablespoons paprika

1/2 teaspoon dried thyme

1/2 teaspoon dried oregano

1/2 teaspoon ground cumin

1/2 black pepper

2 large eggs

1 cup whole milk

1 gallon canole oil

salt to taste

Directions For Blooming Onion

Whisk the flour, cayenne, paprika, thyme, oregano, cumin and 1/2 teaspoon black pepper in a bowl. In a small deep bowl, whisk the eggs, and milk.

Place the onion in a separate bowl, cut-side up, and pour all of the flour mixture on top. Cover the bowl with a plate, then shake back and forth to distribute the flour. Check to make sure the onion is fully coated, especially between the "petals." Lift the onion by the core, turn over and pat off the excess flour; reserve the bowl of flour.

Using a slotted spoon, fully submerge the onion in the egg mixture (spoon on top, if necessary). Remove and let the excess egg drip off, then repeat the flouring process. Refrigerate the onion while you heat the oil.

Heat the oil in a large deep pot over medium-high heat until a deep-fry thermometer registers 400 degrees. Pat off excess flour from the onion. Using a wire skimmer, carefully lower the onion into the oil, cut-side down. Adjust the heat so the oil temperature stays close to 350 degrees. Fry about 3 minutes, then turn the onion over and cook until golden, about 3 more minutes; drain on paper towels. Season with salt and serve with the dip.
